🛒 Ingredients
Here is exactly what you need to prepare this decadent seafood pasta (as pictured in image_809342.jpg):
For the Shrimp:
500g Large shrimp (peeled, deveined, and patted dry)
1 tbsp Olive oil
1/2 tsp Garlic powder
Salt and coarsely cracked black pepper to taste
For the Pasta & Alfredo Sauce:
300g Fettuccine pasta
4 tbsp Unsalted butter
3 cloves Garlic (finely minced)
1.5 cups Heavy cream (at room temperature)
1 cup Freshly grated Parmesan cheese (don't use the powdered stuff!)
Salt and black pepper to taste
Fresh parsley (finely chopped, for garnish)
👩🍳 Step-by-Step Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a rolling boil.
Add the fettuccine and cook according to the package instructions until it is al dente (usually 8-10 minutes).
Important: Reserve about 1/2 cup of the starchy pasta water before draining. Drain the pasta and set it aside.
Step 2: Sear the Shrimp
Season the dried shrimp with garlic powder, salt, and plenty of cracked black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the shrimp in a single layer and cook for about 1.5 to 2 minutes per side until they turn pink, opaque, and beautifully seared.
Transfer the shrimp to a plate and set aside so they don't overcook.
Step 3: Build the Homemade Alfredo Sauce
Turn the skillet heat down to medium and melt the butter.
Add the minced garlic and sauté for about 1 minute until fragrant (keep an eye on it so it doesn't burn).
Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, until it starts to thicken slightly.
Turn off the heat (or lower it to the absolute minimum) and stir in the grated Parmesan cheese. Keep stirring until the cheese completely melts into a smooth, velvety cream sauce. Season with salt and pepper to taste.
Step 4: Toss Everything Together
Add the drained fettuccine pasta and the seared shrimp back into the skillet with the sauce.
Gently toss everything together until every strand of pasta is coated in that rich sauce. If the sauce feels a bit too thick, add a splash of your reserved pasta water to loosen it up.
Garnish with finely chopped fresh parsley and an extra sprinkle of black pepper.
To Serve: Twirl into large shallow bowls, top with extra shrimp from the pan, and serve immediately while it's hot, fresh, and perfectly creamy!
