This recipe features juicy, tender chicken drumsticks coated in a sticky, sweet, and smoky honey BBQ glaze. Paired with velvety mashed potatoes topped with rich gravy, sweet roasted carrots, and buttered corn, it’s the ultimate comfort food meal that is incredibly easy to make!

For the Sticky Honey BBQ Chicken:
6-8 Chicken drumsticks
1 tbsp Olive oil
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Smoked paprika
Salt and black pepper to taste
1 cup Of your favorite BBQ sauce
3 tbsp Honey
For the Creamy Mashed Potatoes & Gravy:
4 large Russet or Yukon Gold potatoes (peeled and cubed)
4 tbsp Unsalted butter
1/2 cup Warm milk or heavy cream
Salt and pepper to taste
Ready-made or homemade brown gravy
For the Veggie Sides:
1 bunch of Carrots (peeled and cut into sticks)
1 can of Sweet corn (drained)
2 tbsp Butter
Fresh parsley (finely chopped, for garnish)
👩🍳 Step-by-Step Instructions
Step 1: Roast the Chicken & Carrots
Preheat your oven to 200°C (400°F).
Pat the chicken drumsticks dry with paper towels. Toss them in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
In a separate bowl, toss the cut carrots with a little olive oil, salt, and pepper.
Arrange the chicken and carrots on a large baking sheet lined with parchment paper. Bake for 25 minutes.
While baking, mix the BBQ sauce and honey in a small bowl.
After 25 minutes, take the chicken out, brush it generously with the honey BBQ mixture on all sides, and return to the oven for another 10-15 minutes until the chicken is fully cooked through and the glaze is sticky and bubbling.
Step 2: Make the Velvety Mashed Potatoes
Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook for 15 minutes until fork-tender, then drain.
Mash the potatoes while hot, adding the butter and warm milk gradually until completely smooth and creamy. Season with salt and pepper.
Step 3: Quick Buttered Corn
Heat 1 tablespoon of butter in a small saucepan over medium heat.
Add the drained sweet corn, season with a pinch of salt, and sauté for 3-4 minutes until warmed through and glossy.
