Turkey & Stuffing Bites

 


Ingredients

  • 1 lb ground turkey (or ground chicken)

  • 1 cup stuffing mix (like Stove Top), crushed

  • ½ cup turkey or chicken broth (plus more if the mixture is too dry)

  • 1 large egg, beaten

  • ½ cup celery, very finely diced

  • ½ cup onion, very finely diced

  • 1 tsp poultry seasoning (or a mix of dried sage, thyme, and rosemary)

  • Salt and black pepper to taste

  • 1 jar (or homemade) turkey gravy

Instructions

  1. Prep the Veggies: In a small skillet, sauté the finely diced celery and onion in a little butter or oil until soft and translucent (about 5 minutes). Let them cool slightly.

  2. Mix it Up: In a large bowl, combine the ground turkey, crushed stuffing mix, chicken broth, egg, poultry seasoning, and your sautéed veggies. Mix gently with your hands just until combined—don't overmix, or the meatballs will turn out tough.

  3. Shape: Roll the mixture into balls (about the size of the ones in image_df5fbd.jpg, roughly 2 inches) and place them on a parchment-lined baking sheet.

  4. Bake: Bake at 400°F (200°C) for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and they are beautifully browned.

  5. Sauce and Serve: Warm up your gravy in a saucepan. Serve the meatballs swimming in the gravy, just like the picture, alongside some mashed potatoes or cranberry sauce.
