🛒 Ingredients:
For the Salmon:
2 fresh salmon fillets
2 tbsp olive oil
2 tbsp honey
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp lemon juice
Salt and black pepper to taste
Fresh parsley (chopped, for garnish)
For the Roasted Potatoes:
500g baby potatoes (halved)
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary or thyme
Salt and black pepper to taste
For the Cheesy Asparagus:
1 bunch of fresh asparagus (trimmed)
1 tbsp olive oil
1 clove garlic, minced
1/2 cup shredded mozzarella or parmesan cheese
Salt and pepper
👩🍳 Instructions:
1. The Potatoes:
Preheat your oven to 200°C (400°F).
Toss the baby potatoes in olive oil, garlic powder, rosemary, salt, and pepper.
Spread them on a baking sheet and roast for about 20-25 minutes until golden and crispy, flipping halfway through.
2. The Salmon:
Season the salmon fillets with salt and pepper.
In a small bowl, mix the honey, minced garlic, soy sauce, and lemon juice.
Heat olive oil in a skillet over medium-high heat. Sear the salmon for about 4-5 minutes on one side until beautifully charred.
Flip the salmon, pour the honey garlic sauce over it, and cook for another 3-4 minutes while spooning the sauce over the fish until glazed.
3. The Cheesy Asparagus:
Toss the asparagus with olive oil, minced garlic, salt, and pepper.
You can roast them in the oven during the last 10-12 minutes of the potato cooking time, or sauté them in a pan.
In the last 2 minutes of cooking, top the asparagus with plenty of shredded cheese and let it melt completely until gooey and golden.
To Serve: Plate everything up, drizzle any remaining glaze from the salmon pan over the fish, garnish with fresh parsley, and enjoy! ❤️
